resolutions up to 1360 x 768 through HDMI and VGA." Does this quote mean you can only use the HDMI for the PC?

No. It states HDMI and VGA for PC connection. I don't think there are too many PC's available yet that have HDMI interfaces anyway.
The HDMI should be able to be used by any external source (STB, DVD,etc).

Thanks. Another question though. I have read somewhere in the forums that using HDMI will deactivate Component or confuse it. This monitor has one HDMI and one component connection. If I connect the STB using HDMI, can I still use component for a DVD player, game system, etc.?

Depends in the TV and whether the HDMI and component inputs of the TV are on a "shared" input or separate. (I.E. both in AV1 or INPUT1).
If there are separate inputs (HDMI = AV1/ component AV2), there should be no issues.
The reference that may have confused you is probably in regard to "outputs" from an STB (cable/satellite box).
